NaBloPoMo – Day 4
For Littlepixie’s birthday party, we cracked open our eagerly anticipated & newly arrived Eat, Drink & Be Vegan by Dreena Burton.
We made the Coconut Cake with Coconut Dream Frosting. It was a lovely texture, kind of moist but fluffy, which is hard to get in vegan cakes. The recipe makes two layers, which we sandwiched together with some frosting and some shredded coconut. We covered the top with more frosting and a good lot of shredded coconut.
And added a big 1 candle, of course.
The frosting was (as Dreena describes it in the book) like pudding, very thick and creamy. We only used about 1/2 of it on the cake. We subbed in a sunflower spread for the macadamia butter, and had no coconut extract, but it was still yummy, tasted of almonds!
Served with some Swedish Glace Mocha & Coffee Ripple soy ice-cream, it was gobbled down in no time by vegans and non-vegans alike.
So a great start to our ED&BV adventures!
Being too small for so much sugar, Littlepixie had to content herself with a banana and some rice cakes, and all of her new toys!

A belated happy birthday to the little pixie.
What do you think contributed to the fluff? I’m making my first vegan bday cake for my son this weekend and we want to do chocolate or vanilla, so I can’t just steal the coconut recipe, but if there is some trick ingredient you could point to so that I can look for it as I browse recipies, that would be a huge help!
Also – do you have a favorite vegan cake mix — in case I panic?
hi mom, I don’t bake cakes very often so I’m not really sure what works. there was a 1/4 cup of applesauce which is sometimes used as an egg replacer so that might have been the key. Any vegan muffins I’ve baked that have soy yogurt in them tend to have a nice texture too.
