So, as you do on rainy days, myself & Littlepixie went through the kitchen cupboards looking for interesting things to play with. And I found a package of organic figs that were about to go off! No!
So a quick googley trip later and myself & LP were bedecked in our baking aprons and mixing up some Sugar-free Banana & Fig Cookies. Half an hour after finding the figs we were tucking into some very delicious biscuits, LP loves them and there is no crap in them, excellent!

I’ll post the recipe here, as I found it on a public forum

Sugar-free Banana and Fig biscuits - makes about 20 cookies
3 large bananas, mashed
2 cups rolled oats
1 cup chopped dried figs
1/3 cup oil
1 tsp vanilla essence
- Preheat oven to 350F or 170C.
- Combine bananas, oats, figs, oil and vanilla.
- Allow to rest for 15 minutes to let flavours mingle.
- Drop teaspoonfuls onto an ungreased baking tray and bake for 20 minutes or until brown.
- These could also be made with dried apricots, dates or sultanas instead of figs. The riper your bananas are, the sweeter your biscuits will be.
We threw in a big handful (scientific eh?) of dessicated coconut when mixing, and also sprinkled the tops with some coconut before baking.
I will say, however, that olive oil is not the best oil for cookies at all (but I kinda guessed that!) LP loves them, but they taste very olive-oily to me, still they are good but next time I’ll use safflower oil (I had none in the cupboard this time).
